I know this is the holiday season and nobody wants to think about eating healthy, but this is my all time favorite way to serve vegetables. I had recently been to the Santa Monica Farmer's Market and made this for friends as an appetizer. All I did was chop up some fresh veggies, add olive oil, some chopped rosemary (or whatever fresh herb you have), and sprinkle with kosher salt, put them on a cookie sheet lined with foil and broil them till golden brown. I turned them once.
Voila - you have the best way to eat veggies ever. Various ways to serve: as a side dish, with dip or hummus as an appetizer, sandwiches and so on. Not only are they delicious, they are visually a work of art.
