Since this is Super Bowl Sunday and I plan on attending a party in which I will bring at least one appetizer, I have been looking at recipes for hours. I'm trying to come up with something more interesting and healthy than the usual chicken wings, 9-layer bean dip, or nachos. Here are a few of the front runners I am considering:
GREEK NACHOS. A step up from the usual greasy, cheese whizzy, nachos that are prevalent in Los Angeles. This recipe uses pita bread, ground lamb (I would substitute ground chicken or beef) and a feta tahini sauce topped with fresh tomatoes and cucumbers.
Homemade Hummus. This recipe uses dried chick peas which would be more complicated than using canned, but probably a lot fresher tasting. I love hummus and so does the host of the party, so this will probably win out.
If I want something easy to make, but harder on the wallet, I will probably go with my two favorite things, smoked salmon and grilled asparagus. You can never go wrong with a recipe from Giada.
Since I am craving salmon for some reason, this salmon spread from David Lebovitz looks good also. It would go well with toasted bagette slices.
BALSAMIC BEAN DIP WITH FRESH VEGETABLES. I love the picture of this, but the recipe from Epicurious, looks like it needs some help.
